COURSE
DESCRIPTION:

A study of the physiological basis for dietary
modification and nutritional support in treatment diseases of major
organ systems and in-born errors of metabolism. A continuation
of NUDT 401. Three hours lecture. Prerequisite: NUDT 401
|

COURSE
OBJECTIVE:
|
This course offers
learning opportunities that provide for further development of
knowledge and skills in Medical Nutrition Therapy. Students
are expected to engage in critical thinking and utilize problem
solving skills to conduct nutritional assessments; and develop,
document, and evaluation nutrition intervention strategies for a
variety of disease states.
|

COURSE COMPETENCIES:
|
|
With a minimum proficiency of 70%, the successful student will
demonstrate the ability to:
|
- Explain the biochemical and physiological basis for dietary
modification in the treatment of specific disease states.
- Describe the psychological and behavioral bases for nutrition
intervention in health and disease.
- Plan normal and modified diets for individuals in various states
of health and disease.
- Use appropriate dietary guides and manuals in nutrition
counseling and diet therapy.
- Use appropriate communication methods to document nutrition care
services.
- Calculate nutrient needs based on physical and clinical data.
- Use teaching tool and aids in nutrition counseling and diet
therapy.
- Utilize computer technology to perform nutrient analysis and
research.

PROJECT
|
|
Develop an educational unit-aid for a patient who is being discharged
from an acute care setting to the home. Assume that he/she has
been diagnosed with one of the disease conditions listed on the course
schedule, and that he/she will be discharged to the home with limited
assistance in grocery shopping only. Your lesson should include
a description of the disease process, the type of discharge diet, food
that should be included and/or restricted, based on the diet
order. The lessons should be geared for a person at the fourth
grade level of education. Remember to include visual aids for
your simulation.
